At the age of 39, Chef Renan Moreno, a graduate of the Franco-Brazilian haute cuisine school, has shown why he chose his profession so well.
At the head of Solar do Paço's catering department, he reveals his mastery of combining textures, flavors, and aromas, delighting different palates.
Before starting a new career, Renan, who was born in the south of Brazil, embarked on a number of gastronomic adventures. Passing through South America, in countries such as Brazil, Argentina, and Uruguay, he sailed to Europe, taking his gastronomy to Spain and finally to Portugal, where the sea, the mountains, and its people captivated him to such an extent that he took that country for his own, making an important leap in the progression of his career. Willing to continue learning and with "apron and knife in hand", he headed up several venues, some of them quite traditional, until he arrived at Solar do Paço, a place he has helped to grow since it opened its doors.
Wherever he has been, his mastery and professionalism have been unquestionable, making him a benchmark.
As a maxim, he brings with him Fernando Pessoa's catchphrase "Put as much as you are, into as little as you do", which he applies in his kitchen daily and which surprises him at every event he organizes.
